Hi Philippe,
The AVT Stingray F-046C are the cameras that we currently use at the
official competitions. It is definitely the best tested camera model in
the Small Size community.
However, I wouldn't necessarily buy the Stingray cameras. There are
newer/cheaper camera options. For example, the Guppy Pro F-046C is
equipped with the same sensor as the Stingray F-046C and is
significantly cheaper. This camera seems to be a good alternative option
to me. I don't know of any team using the Guppy Pro F-046C yet.
Nevertheless, teams use all kinds of AVT cameras and I haven't heard of
any major issues so far.
If you have any more questions, I encourage you to keep asking.
The currently active teams that are rather geographically close to you
are TIGERS Mannheim (http://tigers-mannheim.de/, Mannheim, Germany) and
my team ER-Force (http://www.robotics-erlangen.de/, Erlangen, Germany).
If you want to visit, share information, or engage in some friendly
matches, feel free to contact us.
We have quite a few public resources, which might help you.
Unfortunately they are currently rather badly indexed.
There is a simulator called grSim for SSL:

Skuba published mechanics and electronics:

TIGERS Mannheim recently released their software/electronics/hardware:

There are some log files recorded at previous competitions:

The standard software used at RoboCup:
SSL-Refbox: https://github.com/Hawk777/ssl-refbox
SSL-Vision: http://code.google.com/p/ssl-vision/
Cheers,
Michael
